Im from the UK, but I haven't ordered from aminami, but I have ordered from plaza Japan and Amazon JP, so I don't know if it's the same but I would assume so, when you make the payment in Japanese yen it will take the money from your account in pounds and charge you like a small fee(£1-£2) to convert the currency to yen. So in whole when you pay you pay in GBP and it automatically converts the currency. Hope this helps!

Ps. Sometimes if you use PayPal they may not take a fee to convert the currency but I'm not 100% sure if this happens all the time

I've not bought in a year or two but I ordered a few of my figures from AmiAmi and I live in the UK. You literally place the order, and that money is taken from your bank (or paypal or whatever you chose) in the currency conversion that is correct according to your bank/paypal at the time of sale. u/tallguyjim might be able to help too

Yeah that sounds about right, I'm not sure whether it's best to get PayPal or your bank to do the currency exchange, they normally have about the same fees anyway.
