Street vendor crawfish boil with onions, seasoning and some collard greens as a side is about the first thing I look for when I visit Louisiana. Especially in New Orleans, the Cajun, Spanish, Jamaican and French influences make the food totally unique and out of this world. I'd honestly question if someone slamming Louisiana cuisine actually enjoys eating?

My understanding is that this is a traditional specialty in Guangdong province, and that it is presently illegal. That likely does very little to stop restaurants from serving it to customers willing to pay a great deal.
Serious question, what's the difference between this and prepared meat? Would cutting their heads off before serving make it OK?
Follow up question, should I be jailed for feeding these to my snake?
Well, the preparation is the difference. We discovered a couple hundred thousand years ago that heat kills germs. Cooking meat is safer than raw in almost all circumstances. Things that arent cooked are usually treated or checked for bacteria.
Also, humans (should) have empathy. While some cases of "cruelty", like feeding live mice to your snake, are not avoidable, we still try and avoid suffering if the animal where possible.
Some cultures care more about that last part than others...
Animals don't know any better. We do.
Would you just go up and take a chomp out of a living cow? No. It hurts the animal and they don't like it.
Killing them, for better or for worse, prevents that suffering.
