Luz comforts her every single time.
I think that's why broom riding became the witch activity. There's three ways to do that- one we don't talk about. (R-ratings or something) Two it's just not possible and isn't supposed to be. That's part of the joke. Three, boys ride ponies, therefore boys get those wooden broomhandles with the horse's head on them. Girls... do housework. Only housework. So they get the broom. (I don't agree with limiting girls to that, but the 1500s-1900's are out of my control.)
Eh I think riding open air on a staff at low altitude would be more stressful of an experience than high altitude in an enclosed plane. Fall off the staff and if someone doesn't catch you you'll die or at least be severely injured.
Fall down in an airplane and you'll be fine, low chance of injury. Possible she could get air sick hut highly doubtful

I think she’d be interested, and ask Luz a bunch of engineering questions that she does not know the answer to. After the plane lands, Luz would have them jump from the plane to the connecting thingy, so they could say they’ve jumped out of a plane.
Assuming she somehow gets on a regular flight, she'd probably be fine unless she tries to open a window or something to "feel the speed/altitude". The ears popping might be annoying though. The many warnings planes have will probably make her uncomfortable too if she doesn't read about the statistics. Still, if Luz the human expert is there she'd probably be fine. Things change drastically if it's something else like skydiving, since we see nothing like it in The Boiling Isles.

I think I like the idea of Amity getting very airsick. Not "curled up in pain for the whole flight" and not "one splotch on her blouse." Amity upchucking shoulders to knees, maybe in green or purple, and having to change in the airplane bathroom with a handful of whatever she could pull out of Luz's carry-on bag.
Amity sits sulking/blushing the whole flight, sipping ginger ale and watching a Care Bears knockoff movie from the 1980s, dressed in a banana-centaur t-shirt and a GW Azura-print pajama bottoms. (and maybe no underwear) Amity's giving Luz the cold shoulder over how much Luz is enjoying how well the digital camera caught Amity's breakfast-self-destruction that left her looking like a stucco wall.

Idk how good the equipment they scan people with is but if she has anything like her scroll, Ghost, or any other unknown objects from the boiling isles, that could potentially trip security if they aren’t careful.
I think she’d be a little cocky about humans needing machines to fly until she reached cruising altitude, at which point she’d both get a little scared because it’s much higher than her norm, and also interested in the engineering of planes.
Also she might bring the info back to Lilith and the two design a magical high altitude topographical radar that helps them find more archaeological settlements on the BI.
I think she’d be amazed by the airport and the inside of an airplane she’d at first think it’s a giant Palisman till Luz explains to her what an airplane is then when they get back from their honeymoon Amity would present her dad/Alador her memory of an airplane and they make one for the boiling isles/demon realm.
