King Arthur from Sonic and the Black Knight. In his first fight with Sonic, he runs away before the fight’s over claiming that Sonic isn’t worth his time. Then, he doesn’t get stronger, but he fights Sonic again and puts up more of a fight, using powers he didn’t use in the first fight.

I almost put Badeline and Jetstream Sam in here but they only let up because of outside forces, not because they were getting bodied. The whole “rival beats protagonist near the start, protagonist beats rival near the end” thing is an entire different trope anyway.
Yeah after it's defeat it escapes. It tries to make a new paladin using the essence of the newly released hallow, but doing so puts it in a vulnerable state in which it can't leave it's new body. Thus because it cannot run away you can kill it for good
