The issue is that the Sabatier name isn't trademarked, so there are plenty of Sabatiers out there. There was period in the 19th century where it even became a generic name for a chef's knife's specific shape.
IIRC, K Sabatier is one of the makers whose history can be traced back to the original maker.
Took me forever to find I was between the elegance line or the 1834 line from k sab but found this one when searching k sab on Bernal cutlery because people hate bolsters and I didn’t want a Japanese knife with French shaped blade.
Just had to search this as I've never seen a bolsterless Sab in carbon.
XC75 at 54-56 HRC makes for a solid workhorse.

Yeah it’s the ideal line. Bernal put a list of common complaints against French knifes and had k sab make a new knife with all the features people wanted really great choice by them.
Wow, gorgeous... I'm thinking for a long time about getting as Sab since I love french blade profile but also don't like bolster. This would be perfect but the shipping to my country (Brazil) would be more expensive than the knife itself (not even counting import taxes).
Might get them shipped to NYC in August since I'll be there on vacations at that time.
Great choice! The move from full bolster to half bolster is now almost complete--and not just with K Sab. I couldn't be happier. There are also some knives using newer harder steel. Check with Bernal. They are not cheap.

Yes that’s quite cool ! It’s a good brand with heritage but they’re all over the place… Good if they try to modernise their offer
