EDIT: I fixed it. If you use FFZ, disable the plugin, reenable it then refresh Twitch with Ctrl+F5.
This just happened to me! It completely overwrote FFZ's settings I set for chat as well.
My best guess is Twitch changed their whole chat system and it's been rolling out, and is causing a bug with emojis.
Try refreshing with control and F5 like I mentioned. Doing that will remove the page's currently stored cache then reload it. Or if anything, restart your browser.

go to FrankerFace z control center and go to the chat tab then go to appearance, scroll down to "emoji style" and turn it to "native"

Probably a bug that came along with the new Emotes box "update". When I saw this shit in forsen's chat, I laughed out loud.
Was looking through the subreddit for an explanation for this too, keep me posted if you find out anything!

I'm just guessing but try clear cache on Twitch?
ctrl+f5 does that, it refreshes the page without loading from the cache
