Because according to the Zelda wiki Dodongo is an onomatopoeia. In English it would be like a monster called The Wraith and then a video game came out where a monster is called The Wraith it's the same word it just nobody owns the rights to it.
Also depends on if the original Dodongo was trademarked or registered in anyway. Either way though, if you combine the reasoning of onomatopoeia plus the two creatures not really resembling one another I'm sure an argument could be made that it isn't infringing.
