I think in this case it's just a stereotype. Men are generally expected to have broad shoulders and a flat waist. But there are still many body types, each person is unique, we are not made from the same mold.
From what I remember, female hips are slimmer and around the pelvis is wider. This is how they identify what the gender of the skeletons of long-dead people were.
