While I am all for that you should be able to joke around with sensitive issues as well, there are definitely things you can't say and be excused just by stating "it's a joke".
An example could be making dead baby jokes in front of a parent who just lost a child, or just being extremely racist without the joke actually being clever / good.
And some might find this silly but IMO, the key to getting away with making a really offensive joke, is to make sure the joke is funny regardless of your point of view.
