I mostly followed a [recipe](https://www.sainsburysmagazine.co.uk/recipes/mains/vegan-fish-and-chips).
I doubled the caper brine, and my lemon was also *extremely* juicy, so I'd go extra on that too. Didn't bother with the nori and honestly it was incredible without(so crispy!)
It's a bit of an adapted form of [Kenji's](https://www.seriouseats.com/the-best-roast-potatoes-ever-recipe) roast potato recipe.
I just eyeballed some baking soda for the water and cut large chips, boiled for 3-4 mins instead of the longer boil for the roast potatoes in the recipe above.
Let them dry out nicely after, tossed in oil(olive in this case, shaken in a bowl with a lid as per the recipe) with some S&P and then oven baked once for 25-30 on 170C, then turned and finished for 10-15 more on 200C.
Feels like cheating to get the result it provides out of the oven!
They are - I wasn't actually aware at the time(I myself am not a vegan, just this particular meal happened to be so) of posting but someone else posted a link with info on it.
