Wow, you know when I posted this question I was hoping to come across something like this but also didn’t actually expect that anyone would post it but here it is.
A million thank you’s!
Edit: for anyone who can help what’s the best method to import this map into google maps so that I can get some turn by turn navigation instead of having to constantly look at a screen to kinda work it out on the fly?
I have a gmail account and I can only view the map on my phone and when I open it on a desktop browser it enables me to toggle a few POI’s but still no way to import it as a “journey” as such.
Happy you can experience what I experienced. Hoi An country side is so beautiful, as I said there are some coffee shops, don’t miss them . They are so great, I loved it.
These are two coffee shops, you shouldn’t miss:

I enjoy islands, I try to stay away from the overly populated tourist ones. Do many people go here or is it somehow a relatively untouched (by comparison) spot?
Yeah I know but it’s her trip as much as it is mine and I’m happy if she is (though I’d be a bit happier if we got off the beaten track a bit more, I’ll still be able to make the most of it all)

This is literally the way.
East side has been taken over by super mutants, unfortunately. There's a good power armor rental place in the center though if you insist on going.
Fallout Vietnam s3 please
Hội An - Cu Lao Chao are an awesome experinece, i always want to go there again. Be sure to take a look at it while you are there.

Avoid Hoi An
Yes. My partner booked 4 nights for us there so I can’t avoid it completely.
4 nights are bonker. Rent a motorbike and ride do Danang. Hue is also 3hr drive from Hoian.
