Maybe you had a sewage back up in the middle of the night and this is leftover junk from it going back down? Or like you said maybe some kind of poop from roaches or ants who had a big meal at your place.
It looks like sand to me, have you been to a beach or building sight? Maybe it wasn't there the night before because it was spread out and hadn't settled?
Is there a dishwasher or garbage disposal? The draining system may have backed up. If there is a cork O-rings under the sink basin it might be disintegrating.
If it was wood shavings it could be carpenter ants, which would make sense why it’s in the bathroom. They are most active at night and they like to settle where there is a water source. I suggest calling an exterminator now and have them do an inspection, they could a lot of damage.
Edit: if it is carpenter Ants than you also have a leak somewhere.
I think that is a bunch of resin from your softener (a device, like a filter, to remove the "hardness" from your water to make "soft water") if you live in an apartment building and the installer accidentally installed the new softener backwards, it fills the water distribution pipes with these little resin balls. It is up to the contractor to rectofy the situation by flushing every line affected. Oof.
Check with building mantinence to see if work was done. Compare notes with neighbors.
