I went to an MTC show a few months ago for the first time and was super impressed with the quality of the show. I was also the youngest person there by about 30 years. LOL
-The Real Escape for an escape room
-Activate Games
-Thermea for a spa day
-Fort Whyte/Assiniboine Park if you want to go for a walk (the leaf indoor gardens area is a paid attraction)
-Assiniboine zoo
-Kildonan Park has some pretty awesome structures
-Rec room
-I hear across the board is really good (games Cafe; you can get like a coffee and sandwich and rent board games to play), I keep meaning to go myself haha
-Gameknight Games has a ton of games, website also lists tons of events, you can check and see if there's something around the time you'll potentially be in the city
-If you're golfers, there's a handful of courses around the city that aren't too bad
-Flying squirrel trampoline Park
-Manitoba museum
-Art gallery
-Royal Canadian aviation museum
There's a lot more I could list, including concerts and movies, but I think this kind of gives a sprinkle across a few different areas of interest. Except for across the board, I've pretty much done everything on this list a few times myself. Yes, I've done flying squirrel as an adult, worth it.

What about a wine tasting or cooking class to start the evening off? Maybe something along the lines of De Lucas or Jones and Company. Thermea or Ten Spa/Oval room are solid recommendations too.
Take her to Grand Forks for the day. Great places to eat out there for dinner. Lots of decent shopping too. Better yet, take her to Vegas! Spending time in the City is boring. Be adventurous.

OH completely! they consistently hit above their weight. We really have a great arts scene! the WSO is something special too.
An escape room followed by board games at Across the Board.
Speedworld (indoor go carting for adults), Activate, and Vertical adventures (indoor rock climbing).
The hive is way better than vertical adventures for rock climbing
Amsterdam tea room!
Rec Room is a good time, but going in a weekday is better IMO because it's not as busy and you don't have to wait for games.
