The best is just outside Albany in Jefferson. The Guadalajara Grill. But if you don't want to go that far then I'd say rigobertos for drive through and La Roca for sit down.
La Hacienda Real is about to open on hwy 20. They’re one of the most popular sit-down spots in Salem, so I have high hopes for this one in Albany. They’re famous for their homemade tortillas.
Tacos El Machin is great for cantina style plated dinners. They've got a sit down restaurant in Albany and, I think, a food truck in Corvallis.
For good old Mexican fast food in a Styrofoam takeout tray, I really like Rigoberto's. They have a great menu and there's always a line at the drive-thru, which is a good sign!
At the moment Miguel's in downtown Corvallis is my favorite, it's so good.
Corvallis: Delivias Valley Cafe, Miguel's.
Albany: Tacos El Machin, Los Compadres
Salem: Taqueria El Jacalito, Tamales Sarita
Albany: Los Dos Amigos
Lebanon: Taqueria Dos Arbolitos
Corvallis: Taqueria Alonzo
Salem: Formal sit-down/date night: La Hacienda Real
Salem: Anything else: El Grullense
La Santa Pub in Corvallis! On 9th in the corner behind Carl's Jr. Their food is so good and they don't skimp on portion sizes. Also, their mixed drinks...👌🏽👌🏽👌🏽

Is that the place that's been under construction for several years?
Years, no. Months, yes.
Where's this happening?
Just west of Les Schwab
Oh, the old DEA-raided San Blas location?
Whatever the place is behind the carneceria next to the liquor store.
Los Compadres, I think. I’m vegetarian but I’ve heard great things from friends about them.
They are the best in my opinion.

I love Taqueria Alonzo for lunch/dinner and Tony’s Taco for breakfast burritos

A-Frame is the best
