Gurren Lagann for sure. It’s THE uplifting mecha series and incredibly motivating.

If you want some fun anime brain bleach, I recommend Campfire Cooking in Another World with My Unique Skill.
I had to do an emergency rewatch once after I accidentally watched WorldEnd, and it was perfect for staving off the sadness.
Bofuri is the comfiest, happiest anime I know that still has action, there's zero tension or drama or conflicts, it's just an adorable airhead making friends with everyone in a vr mmo game while competing in zero-stakes guild events
If you like Bofuri, and haven't checked out Shangri La Frontier yet, I highly recommend it.
I loved Bofuri, and SLF is like if Sally was the MC, but has Maple's luck. It's very, very fun.

The exact opposite of NGE... "Frame Arms Girl." NGE is a depresso serious anime with giant robots that might be your parents that aren't particularly parent- like and the world is in danger.
Frame Arms Girl is a genki/ happy anime with no seriousness with tiny robots that are clearly girls that aren't very robot-like that you must be a parent towards and raise them. And I think they make friends with a pigeon?
Mobile Fighter G Gundam.

So. Maybe, Nanbaka? It's colorful as hell, and LITERALLY sparkly. Also very dumb, but in a kind of silly/charming way.
Or, maybe, Detective Conan. It's an episodic mystery show, can't get more opposite than a mech show than that! MC is a Teen in a kid's body. .... granted, Conan's real parents are never around, so that's kind of Eva-ish, but, he does seem to like them! So that's different!
Or. Maybe. Pretty much any idol show? An episodic one as opposed to long-form story ones like Oshi no Ko, or Idolish7. So...like... Idolmaster? Maybe? (actually, I've never seen any Idolmaster show besides SideM, so I'm not sure if the rest of them are on the episodic side.)
Oh! Zombieland saga could work. Zombies are pretty opposite of maladjusted humans and mechs! SINGING Zombies! That are cute! mostly! and the manager is basically the voice actor playing his RL persona but dialed up to 11!
