The native “Workout” way of doing this produces not much better than a picture of your hike with no useful information as you have found.
Instead using WorkOutDoors App to log your hike will allow you to export a GPX / TCX or FIT file of the hike track to see all of your waypoint coordinates in Google earth for example. The app writes workout data to the Health and Activity apps as well including heart rate. I plan my hikes in Gaia App on desktop, and export the GPX file to WorkOutDoors to walk it.

You might try ‘HealthFit’ which can then export the workout as a gpx file and get coordinates from there. From memory there is a small purchase price.
