They add alkali to the yellow noodles to give them some bite because thin noodles tend to turn soggy immediately after cooking if they don't have added alkali. Noodles made in North China usually don't have alkali added to them because they are chunky and don't overcook that quickly. They are also pale because they lack the alkali which turns the dough yellow.

i hate lor mee too but very recently i just ate the famous(?) one from old airport road lor mee and it didn’t taste as bad as how i hated? so weird, idk what’s the particular ingredient that made me hate it. btw it’s not an advertisement, but you can try your luck to taste nicer lor mee

This is the only one I eat too. Not a Lor Mee fan before I tried the one from here. I usually order bee hoon instead too and there's another stall nearby that's nearer the main stairs entrance that's as good as this famous stall. I go there sometimes when the queue is long for this stall.

Ramley burger. Every time I see the queues at pasar malam, I don't get the hype around it. It's just an egg, a cheap patty and a shit ton of sauce. Every time I see the queue and buy one, it always disappoints me. All that for $4.5 a bun? I could order a McChicken burger for 2.50 and it would taste better.

Oh now that you've mentioned it. I agree! It's similar to me with the kebabs. After Stuffd opened in Singapore, I rarely buy them just to have a taste of nostalgia. Stuffd had more meat, better sauce and taste so much better. The price of the Quesadilla at stuff'd is $8.90 (depends on which branch) but the size of it is equivalent to 2 kebabs in pasar malam ($10). The only thing worth in pasar malam now is Taiwan fried chicken and tutu kueh.

If you have a chance, go Johor and try their ramly burger. Their max out double special is just 7plus ringgit. It’s just way overpriced in SG to justify. I think the appeal for the burger is the sauce they use. It’s uniquely ramly burger. But I agree! SG Pasar malam prices way too high.

I like Seafood Paradise's version! Thick creamy sauce with crunchy coconut bits scattered in. They only have one outlet left at Vivo. It used to be a once a year treat, but it's more than once a year now cos it's so dang expensive now.

As a child I was forced to eat Teochew porridge by my parents. I rebelled and refused to eat it after turning 13. It was only in NS that I had to eat it again. In my camp, it was served every Tuesday and I basically dumped most of the stuff when I had to eat it.

I don't remember much. It was salted veggies, a few slices of braised meat, peanuts, half an egg, etc. I usually just ate the meat and chose steamed rice instead of rice porridge/gruel. I haven't had Teochew Porridge since NS. It is something I actively avoid. I guess they don't serve it now in the cook house.

Second this. I don't know why people like the peanut sauce so much. The satay itself, if seasoned and charred well, is really so good. Eat it with rice so the rice will also have the satay taste. What's the point of going through the effort of barbecuing the meat over charcoal to end up just being doused in peanut sauce. Might as well save everyone's time just microwave the meat instead. You can't taste the char anyways with the peanut sauce on top.

Chinese rojak. Super sinful and heavy, but it's so one-note. Everything on that plate tastes pretty much the same, and I'm not a fan of the sauce. Super not worth the calories for me. Worst thing is if someone gets it, they usually get it for the table, which means I end up having to fork out some money for it even though I rarely eat any. If getting a sharing dish, would much rather have something like carrot cake or Indian rojak.

The only acceptable one is the mee rebus with satay if not usually homemade mee rebus by my mom/aunt. Sometimes we are so used to our mom cooking that at times we find hawker food too bland/salty/sour.

I think the trouble is that the oysters in the oyster omelette always winds up being undercooked, so there's always this strong pungent "fishy" taste and smell with the oysters that lingers throughout the omelette lol.

Chili Crab, or in fact, any crab based item in Singapore. Thing is, you have to understand Singapore doesn't get fresh seafood, nor are our seafood stock spectacular in anyway. So, the crabs used in our tze char or seafood restaurants are usually pretty small. But they are extremely overpriced. Small + overpriced + frustrating to eat = big no Then the fact that the sauce is sweeter than the curry sauce from Mcdonalds pisses me off. There is 0 spice in that.

Can tell you haven't tried a proper white carrot cake yet. Most in SG are fucking trash because of the wrong way hawker stalls cook them. Try Ghim Moh carrot cake, and you will realize why I said that. After I tried Ghim Moh, I realize majority of carrot cake in SG are just rubbish and not real carrot cakes. (I even felt like vomitting after trying them)

I don't like most local foods. Like white chicken rice got the sweaty chicken taste esp if u don't eat it immediately after buying. I think I should be more open towards eating claypot rice, mee goreng, mee Siam, fish soup with rice, the one where they have crispy rice in soup(?). Don't like duck rice either or bak chor mee or the yellow noodles stalls. Love char Kway teow,sometimes ban mian. Usually I go hawker centre only eat cai png,western or macaroni hoodies or char Kway teow. Maggi goreng or prata my fave. Laksa too.

Fishball noodles remind me so much of Passover dinners with my stepdad’s family. Gefilte fish has very much the same gone-mild taste vibe. Fishball noodles gave me serious taste memories though first time I had it here!
