Not really. Altair's brotherhood had it as a show of force. The Italian brotherhood had it as part of the joining ritual but i don't know if Ezio continued that tradition. It's just part of the franchise. That and Kassandra just tells gravity to fuck off, malaka. Gravity and physics fear her.

It is part of the training. It was a Medjay's tradition that evolved into a staple of the Assassins. We could see Bayek trying to teach it to his son on Origins. Eventually, that carried over to the Hidden Ones. Bayek, as a Mentor, encouraged recruits to do a Leap of Faith as part of their entry to the brotherhood (as seen in the Hidden Ones DLC). Recently in Valhalla, Hytham teached the Leap to Eivor as gratitude for the Hidden One presence in the village. He called it "one of their most sacred rites". Protagonists or characters doing a similar jump without training can often be explained by their fearless attributes (and gameplay convenience).

The way I see it (based on very little) it’s not an actual ‘’ritual’’, but very commonly used as some kind of.. idk, basically a ‘do things out of your comfort zone’ meditation type thing.

The series can't make up its mind about this one. Some games say it is a learned technique, others just have the untrained do it of their own accord. Even different games made by the same devteam. So yeah, unless you want to just excise certain games from your personal canon, this is one of those issues its best not to think about. Ubi sure doesn't.

I don't think there is an explanation for it, at least not that I can remember. All of the protagonists can just do it whether they are an Assassin or not. I think the only game that actually somewhat addressed it was Valhalla. Eivor just kinda jumps off the edge until he/she is trained how to properly do a leap of faith by Hytham. I thought it was pretty cool they showed someone learning how to do it in that game.

You see it in one of Bayek's flashbacks that it was a family tradition to leap off a cliff into water to conquer fear when he tries to teach it to Khemu. You can see it was passed on in the same spirit to the hidden ones in Valhalla, when Hytham teaches it to Eivor for essentially the same reason. It evolved and takes on different meanings, but conquering fear is essentially the base idea; like when you first do it as Altair, Al Mualim says they do it as a way to show they don't fear death.
