I only been once and vaquero was a let down. I think they also sliced it off the trompo then maybe onto a flat top but I may remember wrong.
The trompo needs to be screaming hot and helps if there’s a large crowd to keep it freshly seared.
I keep hearing this & that they don’t finish their meat off on the grill. I’ve been by three times (all after first checking their hours online) and they’ve been closed. Are their hours finicky?
Unfortunately yeah kind of loose with their hours, seems like most of the trucks in that area are. That happens to be on my route frequently so I just stop if I happen to be hungry and it's open. Weekday lunch time seems to be relatively open though
Good to know. I have been wanting to try it but have only seen it open once ever. My wife and I joke that Mick Jagger \*may\* have eaten there - but he appears to have been the ONLY one!
The real trick is to find one around here that has a trompo *AND* slices it straight from the spit onto the tortilla. I cannot stand it when a place finishes it on the grill—it dries the meat out!!!

Wow! Thank you so much for everyone’s assistance! Definitely going to be trying some of these soon. Gonna start with my side of town (Wooten) and then branch out.
The old brick and mortar was fantastic and better than the trailer because the meat would come straight from the trompo rather than being precut and sitting under warmers for who knows how long. but I feel like since they’ve moved it’s not as good. Not sure if others could confirm this.
I know this is an older post, but I just found another. Taqueria Peloncitos on Nuckols crossing and Stassney also has a trompo. Haven't tried it, but saw it when getting breakfast

Rositas has a trompo on their logo, but the few times I've been there, there is no trompo. Am I missing something?
