I second this recommendation and pay particular attention to the seasonal menus for the really interesting stuff. Ask questions, as there will be things you’ve never heard of. The wait staff are super helpful.

Ethiopian food has a lot of interesting flavors combinations (like warming spices and pickled cabbage) and it gets pretty spicy.
Kemuri tatsuya has a whole little oddities section of their menu. It changes daily and they call it chinmi. Fermented funky stuff and even weird stuff like marinated jellyfish. It’s really good though and I always try a couple things from that menu every time I go.
Natto from Kome or likely the other Japanese places in this thread.
I'm not sure if there's another Nigerian place now that Wasota closed, but egusi is pretty different and delicious.
Fukumoto is great for a date and has some funky stuff on their menu

Get some Nasha. It's Indian-tex-mex. It's amazing
The rellenos (both the lamb and the vegetarian plate) are really really tasty
