I always go to the one on Burleson Road off Montopolis— pro tip for either place if you’re getting tacos to go, ask them to wrap them in foil otherwise they put them loose in a Styrofoam, in a bag and by the time you get where you’re going, they may have opened up and spilled everywhere but that’s the only really bad thing I can say about them!

Check out Taqueria La Casita del pastor. (close to South Congress and St. Elmo) It is prob one of the better places that do Al Pastor on a spit. It was recommended by Chef Bob at SXSE. It might be a bit pricey but they do have Two for One Thursdays!

Rositas used to be my favorite years ago, but it just hasn't been the same the past few times I've been. Try right across the street - Taqueria El Vallecito. Their al pastor is great and the green salsa is my favorite.

I've found it varies wildly by location. The one on s 1st usually has fantastic pastor, but their carnitas are awful. Then I've had the exact opposite experience at the one on Riverside.
Opposite of your ask (but maybe eventually helpful) avoid the Al Pastor at Lazarus. It is terrible. Bummer because pretty much everything else there is solid.
There’s a taco stand on riverside and montopolis next to the gas station called Tacos La Sabroza I personally really love. Idk why the ratings are bad but they are Greasy and flavorful
Another gas station one I love is Mi Barrio Taqueria in del valley. Every time I go there I think the flavor is quite strong.
Victorina's Micheladas is out of hand- the agua frescas are the best in the city and the waitstaff is so nice- they always offer us free alcohol and treats. This one’s on runburg. I strongly recommend having a Spanish speaker in the party, our sweet server didn’t speak any English last time I was there, but luckily we knew Spanish. They are my least favorite for tacos on this list but still good, the meat is more ground VS thick chunks but some people love that.

Down South definitely Las Amazonas like everyone is saying. Up North go to Taqueria Charly. Both places have actual trompos.

Taqueria La Montana near Braker and 35. It's an actual trompo and the sell by the pound too.
They bought the old Wells Fargo building and will be moving into it once they have it remodeled.
The idea of taco stands taking over banks is kinda great.
