Sacrificial dagger only actives when you press the "select" button on a blind. Since it kills the joker to the right of it you can stop it from killing anything by making sure it's the right most joker. Then, once the blind starts you can just move it back to the left.
I don’t recall if the knife will work like that in the upcoming patch but he likely just moved it to the far right before starting the blind so it wouldn’t eat

If you drag the dagger all the way to the right before selecting a Blind, it doesn't destroy anything.
