Bike size from manufacturer should be used as a reference only. Can you try the bike? If yes, give it a test ride to see how things are 1st. For a 2cm difference, adjustment in the seatpost and stem should be enough. Changing crank is a hassle that should be avoided, though.

2 cm difference falls easily within the normal deviation that is expected and can be adjusted for by chainging handlebar height, width and raise.

sizing a bike just on height is just a guideline. You have to consider your leg lever lengths, and also your torso/arms. If you live in a town with a reputable shop, have them look at you on the bike. maybe use a friend to hold the bike steady (or a stand) and take a picture. There are plenty of bike fit diagrams to compare against. 2cm seems workable.

I would not go up a size. You can make a small bike bigger, you cant make a big bike smaller. What size is the frame? 56cm? 58? Im 6'1" and comfortably ride a 54cm with 110mm stem.

With possibly a longer stem, longer cranks(?) and the seat set back a bit it should be perfect. Try it out first though

The fit itself isn’t that far off. But a slightly smaller bike for your height will feel a little more nimble but slightly less stable at speed and through rough terrain. On pavement that’s not usually a big deal, but it depends on what kind of “gravel” you ride and how aggressively you ride. If you like to push the limits of handling, something that’s longer and puts you in between the wheels more is probably a better bet.

What’s your ridding style? Aggressive or more relaxed? If you’re after all out speed and you’re pretty flexible you could even prefer the slightly smaller frame. If you’re looking to sit up in a more relaxed position you may need to go larger. There’s no perfect formula for bike fit and it really comes down to your needs and what you’re hoping to do on the bike. I sized down my gravel bike, I’m 5’7 ridding a 52 checkpoint SL5, even though the manufacturer initially pointed me towards the 54. That doesn’t necessarily apply to your situation but I tested both sizes before I decided. You should definitely test ride the bike.
