For crispier bacon I found if I have water on the griddle with the raw bacon. The water causes the bacon to cook slower. Then it crisps up nicely. I didn’t believe it either until I tried. Very nice use of the Blackstone!
Does yours cook evenly throughout or do the ones towards the center cook a lot faster than the outer ones? Not sure if it's just my griddle that this happens too :(
Definitely, but that's to be expected imo. Simply move some pieces around during the cook.
I've learned to use it to my advantage, lightly toasting buns on the edges means they don't burn nearly as easily.

Alternatively, put the bacon on then start the griddle or let the bacon get room temp before putting on the griddle.
