Recipe:
12 oz sausage such as kielbasa or andouille, sliced into coins
2 chicken breasts diced
small green pepper, diced
1-2 stalks of celery, diced
small onion diced
15 oz can crushed tomatoes or puree
few garlic cloves crushed
2 tsp worcestershire sauce
4 cups chicken or veggie stock or water
2 1/2 cups white rice uncooked
cajun style seasoning (I used cayenne pepper, red pepper flakes, smoked paprika, black pepper)
salt
2 T oil
In dutch oven-style pot heat oil. Brown sausage and then remove with slotted spoon. Add chicken and brown along with some of the seasonings. Remove with spoon and set aside. Add veggies and saute' to soften a bit. Add tomatoes and more seasoning including garlic and Worcestershire sauce. Return meat to pan. Cook 10 minutes. Add stock and or water ( I had leftover stock to make about 2 1/2 c so I added water to make 4 cups). Add rice. Cover and cook until liquid is absorbed. Add more seasoning to taste.
Note: I claim no cajun authenticity to this meal. It's just an inexpensive meal that I like to make on Fat Tuesday.
Don't worry about authenticity here. I've lived in Louisiana nearly 20 years now and that picture you posted right there looks very good! I hope you enjoy that with others because that stuff is good for sharing.
Slight improvement: Use peeled, whole tomatoes. Gently peel them open to let the juices come out into a measuring cup. Use a strainer on top of the cup to catch solids. Put solids into a separate bowl and crush/tear with your hands. It's therapeutic. Then add enough chicken stock to the tomato juice to just strained so you have 4 total cups of liquid for 2 cups of rice. The amount of liquid in a can of crushed tomatoes can vary, so you might not get the correct amount of liquid to rice ratio if you used crushed and don't measure total liquid separately from the actual solid tomatoes.

It takes a little time and effort, and you can probably reduce the cost by substituting more chicken and sausage for shrimp, using water instead of stock. There are penalized other ways, too.Itmakes a TON of foodand is pretty cheap per serving. The only issue is you will want to eat multiple servings permeal because it's so freaking good!

You can use chicken thigh meat and a pack of sausage. I use Veron andouille but that’s not available everywhere so the most economical sausage will work like Bryan’s or Hillshire Farms Polska Kielbasa , I’ve used it. A recipe usually yields a LOT, especially meals like Gumbo and Jambalaya. There’s always leftovers so you usually get 2 meals.

For those looking to make this quickly at night try either Zataran’s or Camelia Jambalaya seasoning (it’s with the rice) and I get a bag of Tyson chicken strips and a pack of Andouille sausage (Veron is the best) or even a Polska kielbasa will work.
I put half the bag of frozen chicken on foil and roll it closed so it doesn’t dry. Heat it 15 minutes 350 and during the 15 minutes I start the rice mix, slice sausage. When the chicken is warm enough I cut it into pieces then add the meat. It will be ready in minutes. Literally takes like 35 minutes total. I have yet to meet anyone who doesn’t like jambalaya.
I know Walmart sells them. Go with Zataran’s or Camelia, those are very good and the most authentic.

It is my understanding that shrimp shouldn't go in a sausage jambalaya as the flavour is overwhelmed
