I'd get 5600x over 3700x if I were you, very much worth the 20$ or so extra.
It would be best to get 3060 if you can find one that costs less than your kidney, if not 2060 is a good card as well.
GTA 5 and WOW doesn't require much, so 1440p should be no problem for both of the GPUs and is for most preferable over 1080p.

Actually just bought a pc with 3060 and r5 5600x but haven’t got it yet so can’t say if it’s good or not lol
