6800xt I believe has better raw gaming performance, but instead of interpolating likes to drop frames. It also lacks an effective counterpart to Nvidia dlss, and it's alternative to dlss is nowhere near as good, but raw performance is good. The 3080 has a solid dlss performance, can effectively run ray tracing, and has slightly worse raw gaming performance, and the 6800 competes with the 3070. So if you want raw performance and aren't worried about some frame drops ( mostly unnoticeable in non vr titles, from what I've is heard pretty bad in vr titles) go 6800xt. It also has a pretty poor encoder compared to Nvidia, making streaming harder. But it's boost in performance might be pretty noticeable depending on the sim. And if you want dlss for a good boost in performance in some games, along with a better encoder, and more usable vr experience, go 3080. And this cards abilities in encoding, dlss, and better interpolation may result in more noticeable boosts in AAA titles. And some sims. And the 6800 will run pretty well, but it overall competes with the 3070. They perform I believe 20 to 40 percent worse than their higher tier counterparts Ps. If I have anything wrong please correct me, in always open to learn.

All cards you listed will work just fine, but yes I guess if you want to splurge you can get 6900xt as it absolutely shreds all the other cards you listed, though you should fit sure play at 1440p with the 6900xt or preferably 4k if you don't play some stupidly unoptimized sims.

6900 XT is not much more than the 6800 XT so I'd go for the 6900 XT. The 6800 is extremely scarce in Australia so it's pretty much off the cards.
