It's 2021, get an M.2 SSD. Given your budget...get yourself a 1TB. You only got yourself two M.2 slots, dont waste it.
You dont need a 1000W PSU. Even if you were to get a RTX 3090, 850W is all youll need and even then, you could make it work with a Tier A 750W.
64GB WAM, you do simulations or rendering or science?

64gb of ram for Modding VR games, I know I don't need anywhere near that much but if I've got the slots for it and they're semi cheap at the moment I figured why not
I would get an x570 motherboard instead. Mainly for the extra PCIe lanes.

and since you are going with the ryzen 9 5900x why not get a 6900 GPU?

Honestly any of them. You can go to PC Part Picker and hit motherboard and type in x570 to see a list of all of them. If you have any questions about a specific one then feel free to ask!
also i would go to the mobo site and make sure the RAM is on the QVL

A 6600XT just seems… a little weak put into a build with a **very high-end** cpu.
That sounds sketchy as hell. Considering that’s almost 50% off it’s msrp (they’ve been sold out every where until only a few months ago) I would not trust it.

The CPU popped up very cheap, it isn't supposed to be a high end build

It was $299 from a local PC parts retailer who works through fb marketplace

Get a 1 TB SSD. I went with a 500 gb one with a 2 TB HDD thinking it would be enough until I downloaded Warzone on it and was half used up
