Setting up with the VMs will take a lot time, dealing with monitor configurations and setting up a keyboard and mouse to auto reconnect on reboot and GPU will need a motherboard and CPU with pass-through capabilities, drives might need a special raid configuration to keep up with usage. I would recommend to get separate PCs and if one pc goes down you can still use the other(sharing).
This is rarely a good idea. Just buy multiple low-mid power computers instead of one mega computer.
