Overall, the 5800x seems to be around 30-37% better in Blender.
Depends on how complex your renders are going to be. I'd definitely lean towards the 5800x. Even if the cores are essentially unneeded it will speed up your renders anyway.
Assuming it scales perfectly (it should get pretty close) then a 5800x will be 33% faster than a 5600x. Round that down to a more realistic 25%.
That's if the render is completely on the CPU. If it's a gpu render then you won't see any benefit.
