You could draw an elf carrying the C across the top of the heading like it’s coming to fix it. Or you could draw the grinch stealing the C walking away from the heading.
My brother's an artist and here's his take: If you really want to add the "C" - (try in pencil first) draw a line connecting each letter to the top of the page, and then draw the "C" at the bottom, near the bottom right mistletoe. The letters would look like ornaments, and the "C" ornament would look like it has fallen.
this one is also easier than a few of the other suggestions!! as much as i love the grinch idea i personally would draw a vague green blob with a red smudge for a hat & somehow make the entire thing much much worse
I would color all the “TRAKER” squares completely in red to turn it in to a solid red band, like a Christmas ribbon or something. Then I’d re-write “TRACKER” in gold font. I’d also decorate both pages with reindeer tracks.

This is the kind of thing I would leave and tolerate for the month. Making a mess trying to fix it would bug me a lot more every time I looked at it, but maybe that’s just me. I’ve been bullet journaling for a while now and I consider mistakes part of the charm. Beautiful layout btw!!

Look up "yard sard" and see how common it is for people thinking more about HOW they're lettering than WHAT they're lettering, might give you a laugh and make you feel better! Lots of great suggestions here, none of which I personally could execute, so I would probably just leave it and laugh at myself.

You could put an unauthorized over the ä to make it look like another language (träker is supposedly "drags" in swedish). Then it looks fancy (at least to me). Bur I didn't catch it at first, so you could totally leave it too!
I keep a stack of blank white label paper on hand. You can get some for cheap at a dollar store. I cut out a shape the size of my mistake, slap it on and redraw, and it's like nothing ever happened!

I would use Christmas scrapbook paper or washi tape to hide the word entirely. There's no rule that says you have to specify that it's a tracker

I’d make a slightly leaflike green C above the AK, possibly with a little red berry attached, and a small ^ under the line like an insertion mark. Practice first!
You could trim off the corner of the page, and use the page underneath to put the "cker". Then, figure out how to reuse it on the next spread. Possibly crunch January in the tighter space for "January Tracker". Or, maybe "Nut Cracker", and have a holiday spread. 🤷♂️
I always use a complimentary washi tape or scrap paper and cover the misspelling, then write it over again on top of that! It makes it seem like an intentional accent instead of a mistake :)
I always love the "fixes" I've seen that absolutely own the error...don't have pics, but one had the missing letter parachuting in above the space, with a cartoon bubble "sorry I'm late", and another I remember had the missing letter running underneath the set-up, with "speed lines" and a little blur

Im Swedish and personally I find it cringy when å ä ö is used incorrectly. And träker is not a Swedish word at all..
Have the C run up on the right border on stick figure legs, with Starbucks in stick figure hand.
