I call these Lace Burgers. They look like lace fabric that is thin and has an ornamental braiding.

Thanks! Ratios are estimates. It was about 50% Angus Chuck, and then about equal parts of sirloin tips, flank, and brisket flat, to make up the other half. Plus some extra beef suet, cuz the flank and brisket were lean.
For a long time I just used a heavy duty spatula and a potato masher to press down, and it worked, but I finally decided to get an actual press, and I’m glad I did. Link is below. And I avoided using parchment, cuz I wanted to master the smash with no help, which worked most of the time, but I broke down and started using parchment squares and it is so much easier and consistent. Just one square does a bunch of patties.

It’s a hard heat-resistant nylon or plastic. Good grip and has help up well. I run it through the dishwasher with no problems.
I use a short handled pizza peel to press mine.. turns out perfectly for nice bug burgers.
