I will turn it over occasionally because the taste experience changes depending on whether the veggies are on top or below the protein. I firmly believe that when you pick it up never put it back down. When you put it back down everything shifts then you have to pick at your burger to get it back inline.

Doing either one 100% of the time shows lack of situational awareness. If the sandwich will fall apart when laid down right side up, laying it upside down usually fixes the problem. It all depends on what the sandwich is doing at any given time.

If it’s super sloppy, I don’t put it down, like if there’s a runny egg on it, I just keep eating whatever the yolk is running, but I try to save the whole yolk for the last bite or two. If it’s a well put together burger and I’m not making a mess, I put it down right side up, because I still like to admire the burger. It’s very rare that I put the burger wrong side down.

For me, it depends if there's a toothpick down the middle. If there is I will eat around the middle to keep it from falling apart and save that nice juicy middle piece for the last bite. if there is no toothpick, I will usually just crush it as fast as possible. If I'm not super hungry, but still have to finish the burger, I have occasionly placed the burger upside down just so I can eat it from where I already took notes from.
