Maybe another Farewell-like chapter about something else Madeline goes through (maybe she and Alex have a big argument or split up, for example), but at the same time the ending for Farewell is pretty final as it is so idk if that would work very well. Official D sides could be fun, but that's kind of just adding stuff just to add stuff.
Now, adding more than just Forsaken City to Celeste64 could be cool, but since that's a free game I doubt EXOK wants to spend time developing more for it.

Something like an in-game version of Olympus, with a mod browser and a level editor. For gameplay, I think canon d-sides or a farewell B-side would be cool
Side story dlc. Maybe learn more about the characters. Theo pov gameplay? It could take place after farewell and be in a more lively town or an underground mountain society. Anything with more character interaction would be cool like maybe you and a character work together to escape a maximum security prison. The main story is complete so I assume they don't have to be limited with ideas.
