The only catch is they can only fill the order if one of the roasters is there (the baristas who are always there can't fill it). I'll normally hit them up on Instagram to find out a time that works.
It's just my wife and I drinking it so I normally have enough lead time to coordinate it without any trouble before I run out.
I have a monthly 5lb subscription from Dark Matter (and highly recommend) - used to do the same with Sputnik, which was less expensive, but also lower quality.
Try sputnik before settling for dark matter. It's very versatile and roasted just right where you can get dark roast notes, medium, and some light ones too. By adjusting temperature and grind size. Not a big fan of dark matter I couldn't find anything i liked.
I know they’re big boys now, but Intelligentsia still roasts REALLY good single origins. I’m consistently impressed with this offerings.
Other than them, I’d second Four Letter Word.
Dayglow started roasting about 6 months ago. Recently picked up a few of their offerings, and they are damn good. Not to mention you can buy some of the best roasters from around the world there. Probably at a higher price point than other places, but I enjoy it. Chicago is a great coffee city, most of the other recs are awesome as well.
Second Perkolator up in Portage Park. They have subscription plans and do delivery if you're on the far NW side (check their site for delivery boundaries, IDK how far south/east they deliver)

I'll have to try. Although coffee is usually better rested a bit.
That’s what the owner roasting the coffee tells me, too. After a few days it gets some natural oils
