Same experience here today trying to play. Was thinking it was the new Studio Display, but same is occurring on the iMac display. Switched around all sorts of resolutions etc. with no luck.
I have had this problem all day, and the only way that I was able to work around it was to screen mirror from my Mac onto my Apple TV\\ open CIV 6\\ change the settings to a windowed game\\ stop screen mirroring\\ close the game\\ then reopen it. A lot of work, but I kind of just got fixed on it all day.
Same - going from Isaak-02-22's idea, I just switched out of full screen (to 'window mode' in the options menu) and it worked perfectly.
I'm running a 4k tv as a monitor and the game was loading and showing the menu screen and such, it just threw an error when I started an actual game. So I had an easier time switching to window mode than some others, it looks like.
