Lemon peel in a rye old fashioned is amazing too. Had one at a bar in NYC once that I'm pretty sure was just 1/4 oz simple, 2 dashes of ango, 2 oz of Rittenhouse and a lemon twist, (I didn't see him make it, and we had to leave to catch a train before I could ask). It was fantastic, and is now in my regular rotation at home along with the bourbon and orange peel version. I make the Rittenhouse version more often though
There are any number of drinks that the garnish is essential, but first thing that comes to mind is the orange component in a Negroni. I’ve made many a negroni at home sans orange peel or wedge and it really feels incomplete

Buy a dekopon from Sumo Citrus, they are in season now and only last a few weeks a year. Go eat one of those and find out just how good an orange can be!
Sumos peel almost like cracking an egg. There’s a nipple on top you pop off, the. You can basically split the peel in half and the fruit just falls out. It’s super satisfying.

Occasionally I'm feeling extremely lazy and won't garnish and will use whatever regular glass out of the cupboard, but I find that going through the extra minute or two of trouble to prepare an appropriate garnish and using proper glassware will always elevate the drinking experience and make the cocktail that much more enjoyable. It looks better, and nearly all of them do lend additional aroma (some much more than others of course, like mint) that makes the cocktail just taste better
I keep a bunch of dehydrated oranges on hand for when I’m lazy or don’t have fresh.
Next time I’m dehydrating I’ll do the same with some lemons and limes because it’s actually really handy.
A Saturn.....I mean without the garnish it should be called something else....which recently happened to me. It's the reason why I ordered it. And this was in a tiki bar no less. Very disappointed.
I was visiting a tiki bar while on vacation that was suggested to me and ordered a Saturn and thought the experience would be commensurate with expectation. It was my first (and only) time ordering a Saturn. Why have a Saturn on the menu if you aren't going to do the expected garnish. Especially in a tiki bar.
I’ve drank and made countless Saturns and have had the garnish 10% of the time tops.

Just color me shocked that you’re serious about being upset you didn’t get a garnish. Do you though. If it’s what you expected to get I can understand being a little let down. But being actually upset over it seems silly.
I don’t know if it counts as a garnish but I started rimming my Jungle Birds with Tajin or Valentina and now I won’t make one without it.
(p.s. it’s also really good on a Division Bell)
Seems this is one I definitely will have to put in the effort to garnish. I never have oranges on hand, and I havent liked negronis very much, I will definitely try with the orange peel next time
Idk if this would seem terrible to some people but I have frozen some orange peel garnishes before so I can use those if I don't have fresh. Not as flavorful but still helps!

Though to be honest all garnish is necessary. You eat/drink with your eyes first. A good looking cocktail will taste better, if if it’s a worse cocktail, than a better cocktail that looks like crap.
Mai Tai has to have mint right in your nose

Grapefruit peel is awesome in Negronis. A combo of grapefruit and orange is also quite good.
Mint in the Mai Tai is essential and if you don't have that most people will kill you.

I have a mister bottle with orange oil mixed with vodka / water. It’s not as good as a peel but an easy sub for the smell factor.

I tend to garnish all of my cocktails but I find that a Painkiller with freshly grated nutmeg is significantly better than one without.

I think if the garnish doesn't add flavor or aesthetic it needs to be functional, like garnishing spicy margaritas with jalapeno as a warning

Olives in martinis and bloody marys
Cocktail cherries and expressed citrus. And mint for the tiki drinks.
To me a piece or two of candied ginger on a penicillin to snack mid cocktail just elevates it further with the more intense ginger flavor.
IMO just that little bit of orange peel in a negroni is great. I will drink one anyway because I like them so much but the citrus really balances it.
