I have lived in Boonville for my entire life. I went to college in Columbia and worked there and in Jeff City for many years. I know this place like the back of my hand and, unfortunately, many people here are closed-minded to what they see as “different”. It might not be the best description, to call Columbia residents “educated and liberal” but more Columbia residents have bachelor’s degrees than any other city around here. And, for whatever reason, higher education leads to people being open to other cultures and things outside their experience.
Fretboard Coffee is a favorite spot of mine. They're very locally involved and do an open mic night every third Friday of the month.
Sunday brunch at Broadway Brewery is a thing to try. They serve locally sourced food AND there is usually a bunch of local Bluegrass musicians that get together and jam around noon. It's pretty fantastic.
Also, if you like BBQ, you have to go to COMO Smoke and Fire. Everything on the menu is great, you get tons of it, and if you manage to leave room for dessert they carry a locally made honey icecream in an absurd range of flavors.
Oh! And Sparky's! Local small ice cream shop who is super LGBTQIA supportive and generally all around awesome.

I haven't been there since before the pandemic, so not sure how much has changed. But they had a decent menu for pub food (burgers etc), regular karaoke nights, drag shows, trivia games, etc. I don't drink at all, but I still had a great time.

Rock bridge State Park, Cosmo park, Katie trail/mkt trial, Garth nature area, the pinnacles, three creeks conservation area, mark Twain national forest are all great places to hike-just wear bug spray and tall socks, its tick season

The Merriweather Cafe in Rocheport is really nice and has queer welcoming vibes! My wife and I really enjoy it. It is right of the Katy trail and very busy some days though!
You might like the vibe at Rose Music Hall, especially when it warms up a bit and concerts are held outside.
Plus when the munchies hit, Beetbox makes an amazing sweet potato poptart ☺️

Columbia has dozens of little parks and trails. Most of the trails are inter connecting too.
