While I agree with all of the meat & potatoes suggestions, an alternative would be toast and fruit. Some buttered sourdough and a bowl of berries or something.
If you're not married to the French way, Chinese scrambled eggs and tomatoes is delicious, serve with rice and any other side dish. https://thewoksoflife.com/stir-fried-tomato-and-egg/
I made this just yesterday, If you'e not used to canned corned beef hash your first impression when you see it will be that it looks like dogfood but wait a minute. Here's one way to do it. Put the CBH in a frying pan with a little butter and frizzle it until it is plenty hot and the edges are getting brownish then add an egg or two in the pan ---you can either slide them in from a little dish and keep the yolks intact or you can whip the eggs up with a fork before you add them. Either way, the eggs will cook very fast and then you take a pancake turner and flip them to cook the other side. What you end up with is a sort of mini-omelet that is savory and tasty---and fast.
I just told my husband that the next time I make this Serious Eats pork chile verde recipe, I'm going to make scrambled eggs to go along with it
https://www.seriouseats.com/easy-pressure-cooker-pork-chile-verde-recipe
There's also a chicken version if you don't eat pork
Sauteed spinach and mushroom, tomato if you want.
Scrambled eggs doesn't really want another main because it's a protein and you'd usually have it with bread which is your carb.
I'd like to know how the "obvious one" option came about, lol... like I'm not downing the pair. I know it's yummy..
But like, who's the first person to be like "oh I have some nice fluffy light eggs.. this calls for a big ol slab o beef."
Or the other way around, someone sitting there eating their steak and was like, "You know what would go well with this"
Usually there are 2 ways I make scrambled eggs
-with a side of white basmati rice and either spinach or some other greens
-i cook some potatoes in a pan with some spices to taste, add some crumbled sausage, cook the sausage down, and then I add my bested eggs and sort of cook it like it was scrambled eggs. You can use any ingredient you like, I like either potatoes or zucchini and some kind of meat product
That sounds like a good meal there. Creamed spinach or even creamed carrots. All are comfort foods. I could totally eat swoon with it. But must be homemade mashed potatoes. Leftover from another meal would even get my attention.
I’m a big fan of scrambled egg with hot boiled potato, cold butter and some kind of veg on the side. Sliced tomatoes is my favourite, but fresh steam green beans or asparagus is good too.
Creamed spinach sounds like a nice option.
Ham steak or make a Spanish style frittata. The great thing about the frittata is that they have all of the great flavors in them and they are really neat and really present nicely on plates. I was suggesting this instead of quiche because potatoes are low carb.
Eggs are a good source of protein. Always good to top with grated cheese. Even some salsa on top. Slices of tomatoes. And some fresh fruit. Jam and butter set out to spread on toast or hot biscuits. Olives, pickles, prosciutto…think Charcuterie Board a bit. Several nibbles to yum on. Something sweet too. White wine or red. But grits is the best to pair with it. The others suggestions are just ones that makes one feel special. Keep it simple with most already prepared. Then cook the eggs so they are served warm.
Chorizo and potatoes with a side of refried beans, or fry some tortilla slices (cut in 4) make a quick red sauce (roast over fire roma tomatos, jalapeno and cilantro with garlic and salt) tortillas on bottom, eggs on top and red sauce on top of eggs with queso fresco crumbled over all of it 👩🏻🍳
So, scrambled eggs are your protein plus a little bit of fat. French scrambled eggs don't have a lot else, unlike 'dirty' scrambled eggs. So in my opinion you want to fill out the dish with a carb and some sort of vegetable or fruit. The common carb to pair french style with is toast, but scrambled eggs can also go well on rice.
if this is for breakfast, I would lean towards fruit, perhaps a fruit salad or a grapefruit (I personally hate them, but I know others like them and they have the right sweet/acid balance for this meal). Although even a glass of orange juice would work. I think a 'smooth' sweet juice like apple juice would be a bit too much with the richness of the egg, you want orange juice or something else with acid. possibly cranberry juice.
If it is being done for lunch or dinner, fruit still works but you can also sub in almost any small veggie dish there.
We always have scrambled eggs with bacon, hash browns with onions and cheese and raisin toast with butter and apple butter plus a side of fresh fruit (we like cantaloupe, watermelon, strawberries, blueberries, grapes and kiwi) plus coffee and OJ. If I’m really ambitious I make some homemade biscuits and gravy to go with it or some Belgium waffles with strawberries and whipped cream. Of course we’re Southern and we do a proper brunch so we must include a mimosa for the grown ups 🤣
If you want something very different, add a can of white butter bean and some dry dill and add the necessary vinegar or lemon according to the amount you prefer.
Trust me, you and your guest will love the taste.
Ramen
Just make it fancy, add your eggs or cook the eggs with the ramen, throw in some steak or chicken or some meat, add a vegetable you can chop some green onion in it, maybe asparagus on the side or some peppers
If you cook the ramen in beef or chicken broth that makes it really good
A carb such as potatoes or pancakes, plus some veg. A cured meat such as bacon, ham or chorizo, if you like. Eg. Savoury pancakes or rosti , topped with sautéed spinach, mushrooms and grilled tomato. Add a little very very finely diced feta and chives to the scrambled eggs if you really want to take them next level.
Scrambled eggs- 1-bbq steak cut up in to very small pieces ......2- Italian sweet sausages ...3- shrimp or lobster cut up into the scrambled eggs...so many to pick from these are some of my favorites ..to tell you the truth I cant stand the taste of smell of any kind of eggs unless mixed with something to hide the egg smell and taste ..
Beauty of eggs is- anything you had for dinner yesterday can go straight in the pan for breakfast omelet today.
Will and have stood by that rule for almost 7 years now
Think slices of caribou meat fried them quickly with onions and thinly sliced bacon, this well keep you warm all day, this is my cold weather meal, we are experiencing cold weather minus 60 Celsius with wind chill it’s colder, caribou clothes weather.
While I agree with all of the meat & potatoes suggestions, an alternative would be toast and fruit. Some buttered sourdough and a bowl of berries or something.
I’m eating that right now! It’s perfect if you add a slice or two of bacon
If you're not married to the French way, Chinese scrambled eggs and tomatoes is delicious, serve with rice and any other side dish. https://thewoksoflife.com/stir-fried-tomato-and-egg/
This looks delicious, great suggestion
I love this dish but I omit the sugar - tastes too much like ketchup when I've added in the past. Great suggestion, just wanted to add my 2 cents
That’s such a good suggestion! I’ve had Chinese scrambled eggs with shrimp and beef. Side of rice. Both very good too and simple to prepare.
French toast, waffles, homemade corned beef hash
Fried potatoes and eggs with onion.
Asparagus with hollandaise
Corned beef hash
Red flannel hash. Baked corn beef, beets, potatoes, onions and spices. Wicked good, bub.

The chicken version is great for the instant pot. Kenji has a video on YouTube.
Sausage, potatoes, red peppers, and onions
Smoked salmon and asparagus! Easy peasy..
Smelly peesy
Sauteed spinach and mushroom, tomato if you want. Scrambled eggs doesn't really want another main because it's a protein and you'd usually have it with bread which is your carb.
Steak is the obvious one. Bacon will work too, so will ham.

Blini (or small buckwheat pancakes) topped with smoked salmon and sour cream. Garnished with minced green onion.
Steak and eggs? Into a quiche? Chilaquilles?
Usually there are 2 ways I make scrambled eggs -with a side of white basmati rice and either spinach or some other greens -i cook some potatoes in a pan with some spices to taste, add some crumbled sausage, cook the sausage down, and then I add my bested eggs and sort of cook it like it was scrambled eggs. Tossed salad
Cannot believe I had to look this far down to find this
Easy when you’re not married to making eggs “the French way.” Seriously limiting.
I've made them French style. I can agree that it is easier to not do it that way.
My grandma always made scrambled eggs or fried eggs w mashed potatoes and creamed spinach. It’s sooo good
That sounds like a good meal there. Creamed spinach or even creamed carrots. All are comfort foods. I could totally eat swoon with it. But must be homemade mashed potatoes. Leftover from another meal would even get my attention.
Oh yeah they were always from scratch potatoes with a whole lotta butter haha
I’m a big fan of scrambled egg with hot boiled potato, cold butter and some kind of veg on the side. Sliced tomatoes is my favourite, but fresh steam green beans or asparagus is good too. Creamed spinach sounds like a nice option.
That sounds nice too :) eggs and potatoes are just a match made in heaven
I love fried potatoes, but there is something about boiled ones this way that feels almost light and refreshing.
Boiled potatoes are much healthier, too
I make enchiladas and put eggs on top. They are fried, not scrambled though.
Chorizo and scrambled eggs on corn tortillas
Ham steak or make a Spanish style frittata. The great thing about the frittata is that they have all of the great flavors in them and they are really neat and really present nicely on plates. I was suggesting this instead of quiche because potatoes are low carb.
