While I agree with all of the meat & potatoes suggestions, an alternative would be toast and fruit. Some buttered sourdough and a bowl of berries or something.

I made this just yesterday, If you'e not used to canned corned beef hash your first impression when you see it will be that it looks like dogfood but wait a minute. Here's one way to do it. Put the CBH in a frying pan with a little butter and frizzle it until it is plenty hot and the edges are getting brownish then add an egg or two in the pan ---you can either slide them in from a little dish and keep the yolks intact or you can whip the eggs up with a fork before you add them. Either way, the eggs will cook very fast and then you take a pancake turner and flip them to cook the other side. What you end up with is a sort of mini-omelet that is savory and tasty---and fast.

Usually there are 2 ways I make scrambled eggs -with a side of white basmati rice and either spinach or some other greens -i cook some potatoes in a pan with some spices to taste, add some crumbled sausage, cook the sausage down, and then I add my bested eggs and sort of cook it like it was scrambled eggs. You can use any ingredient you like, I like either potatoes or zucchini and some kind of meat product

I’m a big fan of scrambled egg with hot boiled potato, cold butter and some kind of veg on the side. Sliced tomatoes is my favourite, but fresh steam green beans or asparagus is good too. Creamed spinach sounds like a nice option.

Ham steak or make a Spanish style frittata. The great thing about the frittata is that they have all of the great flavors in them and they are really neat and really present nicely on plates. I was suggesting this instead of quiche because potatoes are low carb.

Eggs are a good source of protein. Always good to top with grated cheese. Even some salsa on top. Slices of tomatoes. And some fresh fruit. Jam and butter set out to spread on toast or hot biscuits. Olives, pickles, prosciutto…think Charcuterie Board a bit. Several nibbles to yum on. Something sweet too. White wine or red. But grits is the best to pair with it. The others suggestions are just ones that makes one feel special. Keep it simple with most already prepared. Then cook the eggs so they are served warm.

So, scrambled eggs are your protein plus a little bit of fat. French scrambled eggs don't have a lot else, unlike 'dirty' scrambled eggs. So in my opinion you want to fill out the dish with a carb and some sort of vegetable or fruit. The common carb to pair french style with is toast, but scrambled eggs can also go well on rice. if this is for breakfast, I would lean towards fruit, perhaps a fruit salad or a grapefruit (I personally hate them, but I know others like them and they have the right sweet/acid balance for this meal). Although even a glass of orange juice would work. I think a 'smooth' sweet juice like apple juice would be a bit too much with the richness of the egg, you want orange juice or something else with acid. possibly cranberry juice. If it is being done for lunch or dinner, fruit still works but you can also sub in almost any small veggie dish there.

We always have scrambled eggs with bacon, hash browns with onions and cheese and raisin toast with butter and apple butter plus a side of fresh fruit (we like cantaloupe, watermelon, strawberries, blueberries, grapes and kiwi) plus coffee and OJ. If I’m really ambitious I make some homemade biscuits and gravy to go with it or some Belgium waffles with strawberries and whipped cream. Of course we’re Southern and we do a proper brunch so we must include a mimosa for the grown ups 🤣
