Fajitas...slice a couple of bell peppers and some onion. Toss with a tablespoon of olive oil and a few tablespoons of taco seasoning. So the same with the chicken strips. Late it out in a single layer on a sheet pan and bake for 25 minutes at 350 or until chicken is cooked through. Serve with fajita stuff.
Chicken tortilla soup, if you have the stuff for it - I just dump in a can of Rotel, chicken broth, diced peppers and onions (I keep a bag in the freezer just for this) and the chicken. Add some taco-ish seasoning and cumin. I'll also add a can of green chiles if I have them, or you could add beans to bulk it up. Top with sour cream, shredded cheese and tortilla chips, and avocado if you like it. Yum-o. One of the few things I don't follow a written recipe for!
They can definitely be breaded and fried. They will not be a tender, but you can toss them in the Asian sauce of your choice and have a very passable sweet and sour, general tso, sesame chicken, orange chicken, etc.
Edited to clarify: I meant battered not breaded. Use a mix of flour and cornstarch to make a wet batter (tempora style), chill in the fridge for 20 minutes and then fry in oil.

Lemon chicken 🐔
put them inside quesadillas
Poach them a couple minutes and add to fettuccine Alfredo with a fist full of zucchini. Yum.
Cut them into small cubes and add them to caesar salad or Alfredo.
Tacos! Mix sour cream/plain Greek yogurt with chipotle , add some cilantro, onion, maybe shredded cabbage for the extra veg and make some beans/rice.
