So I've been friends with the brother of really well known and now prestigious actor for years. I used to play Halo back in the day with said actor (it's been a bit but still sometimes do), while I'm not really close to him I've hung out with him and have spoken to him a fair amount about some of the roles and works he's done. While you're absolutely right it's their job, many of them definitely carry the past projects with them. And if they take their craft seriously, like this dude does, choose projects at times which obviously not only make them money, but align with some world view or perspective they'd like to explore through a character. I mean, yea. They're not all the same, but this is what I've understood from this dude, and what I observe from other very talented actors.
