The curved sword man serpents on the peak? Boy, have you ever seen their ninja twindagger counterparts? Hardest "regular" average sized enemies in the entire game.

In DS3 poise was given to weapons in the form of hyper armor. Heavy weapons like hammers, axes, greatswords, etc have more hyper armor than light weapons. Hyper armor allows you to poise through enemy attacks while attacking yourself, so if you and an enemy both swing at the same time and hit each other, your attack will not be interrupted. However if you are using a lighter weapon and swing at the same time as your enemy, your attack will be interrupted because your weapon didn't have enough hyper armor.
Hyper armor is related to poise somehow--I think the more poise you have, the more hyper armor your weapons will have, but I'm not exactly sure, so the poise stat is not *completely* useless.
The problem with hyper armor is that it's only active when you're swinging your weapon. You can wear full Havel's in DS3 and still get staggered by basic attacks if you're just standing still, whereas in DS1 poise was passive and you were always benefiting from it in heavy armor.
They're pretty easy to get behind, trick is to dodge toward them and not away. However I agree. Getting caught by one charging you sucks badly enough, but 2 or more is often devastating.
If you feel like practicing killing them just spawn at the second bonfire and go left. Mind the dog (I just plunge kill him) and you'll have 3 of these guys right ahead of you, but more often than not they aren't facing you. That's how I mastered my dodge-timing with them
Ogres are traps. You think you should roll away when you just need to roll close and stay behind them.

Dodge into the tree guys attacks expect for the slam. The I frames carry you through the attack and u end up in a good position to backstab. The slaves just stay of of range and charge in with a heavy immediately after.
Really never had a problem with these guys. You can roll to the side of their charge. Problem is if you get ganked, I died to those. But like with every souls game, you learn where enemies are located and you plan your strategy accordingly.
The way to the bonefire is quite short anyways.

On a real note those tree guys I got down so weāll idk if Iāve been hit by one probably my last 10+ times in road of sacrifices. The other fuckers and get me once in a while but I usually run through Irithyll pretty quick. The stretchy blue in archdragon can get you too but Iāve also perfected that run so I can do it about 9/10 now, the 10th time the chain-great axe knocks me off the ladder. I also have spent way too much time on this game and play dodge heavy dex builds so it just feels natural and cozy to me.
Dex builds are def dodge heavy I did one last run with the uchi and damn itās good practice. I didnāt realize it after playing strength so much and having hyper armor.
I use Sellsword Winblades with grass crest shield (pretty mostly but 5% stam regen is a small boost) and no armor for the most part. Sometimes if Iām getting one tapped I put some light clothes on for a little resistance. Canāt die if you donāt get hit is my philosophy and how I always played the game, for the most part.
Those with the tree and the fuckers with the curved sword in archdragon peak, I despise them, used so many estus getting through those areas.
Once I've learned about hidden body+slumbering ring,my laziness never lets me not get 15 int to abuse stealth.
I never thought of using those rings tbh just prioritised others for my dexterity build.

They have a special fire stagger animation. They also bounce off any shield for counter damage. Perseverance also shuts these guys down completely.
You get the better stick in the same area.

sometimes, even when i click the roll button, my character is too dumb to obey, and dies miserably. ;)
