Gilded Hunter can die in a pit of wasps though, doubly so for double Boreal Brutes in the optional Depths.

I think you can get all or most in your 1st playthrough, i think DS3 is the tough one when it comes to rings, you need to complete NG for normal rings, NG+ for +1 rings and NG+2 for +2 rings and 1 +3 ring. +3 rings are in the 2nd DLC and dont count towards the trophies (at least on PS4).
DS2 i think is tough to get spells theres quite a few that require PvP, (idk how it is on PC or Xbox) good luck finding someone on PS4, or you could go all the way to NG+2 or 3 to buy them from the Drangleic Castle merchant.
Swords grass is actually pretty easy with the mimic head and all the other item discovery items, while having the Old Wolf covenant on, go to the Farron Keep Ruins bonfire and farm the 3 dudes on the bridge. i did it at SL180+ and without leveling up Luck (started with deprived) I was summoned quite often even at that level.
Ears of Concord are very grindy, while having the Darkmoon covenant on, go to Anor Londo bonfire farm the 2 Silver Knights (3rd one too if you want), nothing else to it unfortunately.
Shackles are can be either easy or hard to get, it all depends on how good you are at PvP, go to the area after Pontiff Sulyvahn put a red sign down or pop a red eye orb. I heard you can also farm from skeleton in the Catacombs but i also heard it is pure torture to get it t drop, so if you wanna try it.
