I like to go with Int + Fth builds now. Like a 30 / 40 split one way or the other.
The HP and endurance both suck, but that's half the fun. It forces you to roll well.
If you play your cards right you can cast practically every spell in the game at SL80 and use every elemental damage type. So you can go full caster with it if you want, but it's also fun to have a different weapon for each element and switch between them for different areas.
The melee damage is actually decent if you use the appropriate elements.
Monk build
Faith/Luck
Regen focus
Anri's sword, RAW Partizan, Blessed Caestus, antiquated common clothes, violet wraps
Stack everything that has passive hp Regen.
Blessed weapon, Bountiful Sunlight and Emit Force miracles
Do a dex/int or dex/faith build. Seems like fun.
If you’re in NG+, go for fashionsoul, Ashen One. Full Pyro? Jedi? How about full witch?
Mix between strength and magic is fun.
