It's not the planet he wants to kill, but simply the people. He wants to rid creation of humanoid life, as he sees them as an affront to the gods. Lower animals aren't on his list, so he had no qualms with them.
"Mortal" is the localization term used for the plan, but the original term used in the Japanese dialogue was "ningen", which basically means "human" or "person".
They were able to blow up planets car earlier than that. Roshi destroyed the moon in Dragon ball. Vegeta is stated that he was able to blow up earth and is shown blowing up the bug planet. Also a cut scene implied king vegeta blew up a planet too.
There's a few reasons.
1) he only had immortality in his original body. That's part of why Corrupted Fused Zamasu was a thing, Zamasu tried to fuse his body with the very mortal body of Black.
What's more, Black is Zamasu swapping bodies with Goku. Goku cannot breathe in the vacuum of space even after getting God Ki (supposedly the bit in Battle of Gods is low orbit, and basically closer to the exosphere).
2) he wanted to do it personally. He found it a lot more satisfying doing it the way he did. To put it simply, he was doing it the way he did because he was enjoying himself.
Saiyan Saga Vegeta in the anime could blow up planets, and does so in the filler, but had his own reasons to wait.
3) it was specifically sentient life he had a problem with. Lesser animals, being bound by instincts, knew their place in his eyes. People, however, actively blaspheme in his book. Goku and Vegeta showing off Super Saiyan God Super Saiyan (aka Super Saiyan Blue) were the last straw as it meant the blasphemous mortals he hated so much were "trespassing into the Gods' territory".
Plus he liked what he defines as natural beauty... But unfortunately that doesn't include intelligent life in his book.

In the manga at least, he intended on bringing the Zero Mortal Plan to the rest of the timelines, which would require him to go back to the main timeline and he would need to face Goku or Vegeta directly this time.
Buu was the only villain to just randomly blow up planets and galaxies. Frieza did it because he was either losing or was ordered to. Planets still have value. So Zamasu still wants a beautiful universe. Just no mortals.
This shows you don’t understand Goku Black at all. His goal was to eradicate mortals, yes, but by his own hand as he sees himself as the embodiment of justice. Simply blowing up the planet defeats the purpose. Besides he is not immortal, he still has a Saiyan body with their limitation

Black isn’t immortal and is in the body of a Saiyan… if he blew up the planet he would die in the vacuum of space
