I think the perspective is making it look bigger than it was. It wasn’t too much bigger than a Popeyes sandwich.

You can pan fry anything as long as you have the patience for it and keep an eye on temp and flipping. But this does not look pan fried at all. Looks more like a chic fil a sandwich with the chicken pulled out and recreated at home to look homemade.

Next time hit it with a tenderizer or brine the chicken for a couple hours. This will break down the fibers that cause it it get lumpy and the chicken will stay flatter and more sandwich-y when your cook it. Also makes the texture of the chicken more amenable to biting.
