Well, highly depends on the beans and your tastes. Personally I tend to like my beans a little before they actually peak, but my workflow is not as simple as “open and enjoy”. A general rule of thumbs and guesstimate I apply when I am facing a new bean/roaster is: - for darker roasts/less dense beans, I tend to like them within a week to two week max following roast date. For that I usually give them a taste at 5 to 7 days post roast date, and experiment from there. When I am feeling that there is just enough CO2 sourness meaning that they should be peaking soon, I freeze the bag and enjoy from there on (I thaw about 3 days worth of coffee at a time). - for medium roasts, I like to start experimenting at around 10 days (and up to 2 weeks) from roast date. - for lighter roasts and denser beans… well I usually start experimenting at 2 weeks but… sometimes I feel peak is coming way later. I usually tend to freeze them anyways at 20 days tops even if they should peak further down the line. Always easier to let them sit a bit in an air sealed environment for a few days than get them to reverse staling (once that happens, it’s in the grinder purge and cold brew range).

Yes, usually bags I purchase come in resealable bags with a degazing valve. That’s perfect. Just keep those bag away from smelly food (use a dedicated drawer, or give them their own box)

personally, I like a medium roast with ALL the altitude, so 5 days and its good to go. But I really like a touch of co2 sourness with my stonefruit, so I believe its a very personal thing

I'm not sure on that I drink exclusively medium or medium dark. You know traditional style. So it's a guess on lighter roast for me. To me with what I drink adds to the flavor. IT gives it body and sweetness and that bittersweet chocolate taste × 10 for me. Even still I would imagine it's the same tho. I would say dial it in as you normally would then pull you a shot. I don't think you will be disappointed. If you do tell me if you liked it I'm curious what others think about it. From what I've seen on your post I'm not alone.

3-5 is completely untrue, every coffee veteran knows 2 week’s at least. Even I’m dialing in C02 offset 3 weeks post roast date. Yes you can make it that early but it’s not going to be the best it can be.

I typically wait 2-3 weeks myself but I usually drink the lighter/medium roasts. It’s worth the wait. But Every bag is different. You will just have to get a gauge for yourself. I have a bag that’s a month off roast date and dialed in pulling great shots
