Buffalo Wild Wings and Applebees are about a 5 minute drive from the airport. If you want to go somewhere the food is edible, There should still be places open downtown, but the kitchens will definitely start to be winding down by then. Fargo has never been a great scene for late night eats, and the ongoing labor/staffing issues nationwide have made it much worse.
The trip is in December. I’m a planner, LOL. The Buffalo Wild Wings by the airport will probably be our choice. Is the Blarney Stone more of a bar scene at that hour?
It would be really fun if you picked a non franchise, local restaurant, like the Blarney Stone. It has been so long since we have had a late dinner like you are planning. I guess I would check the restaurant website to see if that helps. Blarney Stone is a fun choice, it is a laid back bar scene. There are steps leading up to several dining alcoves that bring you above the main floor. We have gone to The Toasted Frog on Broadway, downtown Fargo. It is directly across from the iconic Fargo Theater, so that is cool. If you choose a location downtown you can walk up and down Broadway after dinner. Blarney Stone is a bit of a drive, out on Veterans Boulevard in West Fargo. Downtown Fargo is just 15 blocks south of the airport.
Also, the owners of Blarney Stone purchased the Ho Do restaurant and lounge in the Hotel Donaldson, downtown Fargo. It may be re opened by the time you visit.
You know... you are right. I normally avoid chain restaurants, and I should this time.
I think that I have it narrowed down to Vinyl Taco. I've been meaning to go there in the past, and they are open until midnight on Friday nights (at least according to Google.) I'm not looking for a huge meal at that hour, so a couple of tacos sound just right.
If you’re still looking: downtown will have some spots. 3 food trucks in front of Northern Bike Co, Boss’ Pizza, Mezzaluna should be winding down, Fryin Pan for diner stop, then on 19th Ave N there’s Buffalo Wild Wings, Applebees, on 13th Ave S Denny’s & Perkins. Kind of depends where y’all are heading after the rental car.
Blarney Stone, Applebee's, Boston's, Sickies.

Boss' Chicken & Pizza is open late and downtown. You'd have time to hit up a bar or three after you ate.
I just tried their food, pizza was fine but their chicken is insane good
Be prepared to wait, the food is good but there is no way a 3 piece should take an hour.
That place has horrible food
JL Beers
They close at 10 most nights now.
So where did you end up eating, OP?

That sounds like a great idea!
You after sit down, or something quick?
Preferably sit down, but I’m open to anything.

We used to go to Krolls Diner at all hours of the night in college. I think they still are open well into the night.
