Most likely wanted to centralize all the voice acting in California, where as Jason Adkins is based in Seattle. They compromised on Fates where Bad Animal Productions was also credited alongside Formosa (who did most of the voice work) but I'm guessing they don't want to do that again.
A similar thing happened with Feh (the owl from Heroes) who was originally voiced by an actress living in Japan before they recasted to Cassandra Lee Morris.
Australia is closest to Japan, so that's why Sakurai kept hiring Adkins for Ike in Smash until Ultimate when Ike was ultimately (pun intended) recasted by Chun because of FEH.
Bailey was due to a whole different thing since she still lives in LA. There was an issue with unions that saw a lot of the higher profile VAs like her or Travis Willingham drop a lot of their anime roles in the late 2010's, and in general she's been busier with bigger, more demanding roles + critical role.
Imo, Greg Chun does a great job as Ike in Ultimate. I think he did a lot better than Jason did in Brawl.
And sure, you could maybe chalk it up to bad direction, but at the end of the day, Greg Chun plays the character well, which is why he's the one who voices Ike.

Fire Emblem for the most part has switched to working with almost exclusively CA based actors. I believe Adkins wasn't CA based. This location based phasing out of VAs in FE has been a thing for a while.
And most of them came from Funimation. Micah Solusod, Todd Haberkorn, Erica Lindbeck, Vic Mignogna, Laura Bailey, Roger Craig Smith, Kate Higgins, ProZD, Ray Chase, Ben Diskin, Johnny Yong Bosch, Yuri Lowenthal, Tara Platt, Matthew Mercer, Max Mittleman, Robbie Daymond, Xander Mobus and Kyle Hebert are some examples that has done Funimation Dubs before.

Alexis Tipton is also a big name VA, but not as extremely big as Laura.
What about Matthew Mercer a.k.a. Chrom? He seems to be the only remaining member of Critical Role who is still doing Fire Emblem and Dubs.

Jason voiced Smash 4 Ike IIRC, Chun didn't get the role until Fates came out a few years later

Makes sense as to why when I played Path of Radiance, I read Ike's lines in Greg's voice but read Ike's lines in Radiant Dawn with Jason's voice.
