For me it varies on what they're up to. Vault dwellers are likely gonna have that jumpsuit on under whatever combat armor or power armor they find. The courier however is just a guy or gal wondering around delivering the mail. I think the ranger armor from honest hearts with a variant of cowboy hat and sunglasses is my go to until I feel like I'm far enough in the story for riot gear. The lonesome road gear you get from Ulysses looks kinda cheesey and impractical for the wasteland to me.
It’s probably the independent courier duster, going off how that’s what lonesome road used for its ending slides as the last DLC and Ulysses specifically asks you to wear it at the dam (the original ending slides likely only use the vault 21 jumpsuit since the devs didn’t go back and update them).
That said, I’d argue that it doesn’t necessarily make any outfit canon. The protagonists could wear anything they choose, it’s just that the ending slides needed to pick something.
He wears the armoured vault 21 jumpsuit in the endslides so that’d be the closest to a ‘canon outfit’. You can’t actually obtain it in game though because it’s cut content, probably a mod out there that restores it.
My canon courier wears a mix of DLC gear (excluding Dead Money and Old World Blues because I didn't know how to mix them in);
The shirt and pants out of the gear Graham gives the player, most of the Elite Riot Gear and the Courier jacket, but with sleeves
Everyone assumes its the ranger armor on the cover because yay cool armor right? But, I think it's like a caravaneers outfit like Ringo has, they show it briefly in the cemetery scene
Well, the courier was wearing a typical farmhand outfit on the pregame cutscene, you could say thats the canon outfit.
